This Birthday Cake Cookies Recipe is quick and easy to make made with cake mix, buttercream frosting, sprinkles, and birthday cake chocolate kisses. These cookies are fun, chewy and delicious and certainly a new way to celebrate!
I was recently asked to bring cookies to a kid’s birthday party. I wanted to make something that was fun and festive that the kids would go crazy for. Sure, all kids like plain chocolate chip cookies, but they aren’t really “birthday party” special. I wanted to make something better. Oh, and I also had very little time in my schedule for baking so I also wanted an easy recipe!
Cookies with sprinkles are always good for kid events. They are colorful and exciting. Chocolate is also a good idea. Frosting is pretty much a requirement for any birthday party dessert just as cake is always needed.
I took all of these ideas and turned them into this birthday cake cookies recipe! Let me just say that there were zero leftovers after the party. Everyone was crazy about these fun, colorful and delicious cookies! I know you will be too.
Ingredients for Birthday Cake Cookies Recipe
The first time I made this recipe, I was in a rush. I was looking for ingredients I had at home or could easily grab at the grocery store. I bet you have a lot of these ingredients already too.
For these fun and delicious birthday cake cookies recipe, you will need:
- funfetti cake mix– the base of my birthday cake cookies is actually cake mix. That is how they get that tender, cake-y texture and sweet cake flavor! Funfetti mix already has sprinkles mixed in to the batter so it is super easy to get those festive birthday colors!
- eggs– Eggs bind the ingredients together and prevent the cookies from crumbling after they bake.
- oil– I use vegetable oil since it has a neutral taste but canola oil works as well.
- sprinkles– You just can’t go wrong with more sprinkles. Choose sprinkles that will match the color of your party for a perfect extra touch.
- birthday cake chocolate kisses– Hershey’s birthday cake kisses are really delicious. They are white chocolate with little colored sprinkles inside them. It’s as if they were made to match these cookies!
- butter– I use butter to make a simple frosting for the top of the cookies. Butter has a rich and creamy taste that really makes the best frosting.
- powdered Sugar– Powdered sugar melts into the butter to make a perfect, sweet frosting.
- heavy whipping cream– A little cream thins out the frosting so it has a smooth texture.
- vanilla extract– A little vanilla extract enhances the flavor of the frosting. I use clear extract so that the frosting stays very white but regular extract will work, too.
To make birthday cake cookies, you will also need a large bowl, a rubber spatula or spoon a baking sheet tray, parchment paper and a cookie scoop. I use an electric hand mixer to make the frosting but you can also use a stand mixer fitted with a paddle attachment. Essentially you will need all the standard cookie making tools!
Birthday Cake Cookies Recipe
I said it once, I have said it twice, but it needs to be said again- this cookie recipe is easy. You can make it in less than 20 minutes and be on your way to a party– fresh cookies in hand!
Here’s what you need to do:
1. Preheat your oven and get your baking sheet tray ready with parchment paper.
2. Stir together the cake mix, egg, oil and sprinkles.
3. Scoop the batter onto the cookie tray and bake until the cookies are just turning brown.
4. Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie. Let the cookies cool.
5. While the cookies are cooling. Make the frosting by beating the butter and powdered sugar together until light and fluffy.
6. Add the cream and vanilla then pipe the frosting onto the cookies.
Once the frosting is on the cookies, it’s time to eat! Or .. it’s time to pack the cookies up and bring them to a birthday party!
How to Store Birthday Cake Cookies
Once your cookies are baked, store them in an airtight container at room temperature for about 4-5 days. If you put the frosting on the cookies, you will need to store them in the fridge, since the frosting is made with perishable ingredients. They will keep in the fridge for about a week.
Freeze the cookies in a gallon sized freezer bag. You should freeze them without the frosting and add the frosting after thawing. The cookies will keep in the fridge for about three months!
Tips and Tricks for Making Birthday Cake Cookies
I have only made these cookies using my own birthday kiss cookie recipe a few times but I already have a few little tips and tricks. If you come up with any, let me know!
- Use vanilla cake mix and add your favorite colored sprinkles. This is a great way to make the cookies match your party perfectly.
- Grab a container of buttercream at the grocery store so you don’t even have to make the frosting- even easier!
- Regular chocolate kisses or the chocolate “hugs” will work perfectly as well.
- Skip the chocolate kiss and add a candle to each cookie. Put the cookies on a big tray for a cookie birthday cake, complete with wishing candles.
- Use chocolate frosting instead of vanilla.
I know that I will be bringing these birthday kiss cookies to every single kid party I am invited to. I also know that they will always be devoured by kids and by adults. Ingredients
- 1 box (15.25 oz) funfetti cake mix
- 2 large eggs, room temperature
- ½ cup oil, vegetable or canola
- ¼ cup sprinkles plus more for garnish
- 1 bag (10 oz) birthday cake chocolate kisses
Frosting, optional
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1–2 tablespoons heavy whipping cream or milk
- 1 teaspoon clear vanilla extract ** see notes
Instructions
- Preheat oven to 350 degrees F
- Line baking sheets with parchment paper or silicone mat
- In a large bowl, mix together the cake mix, eggs and oil until completely combined
- Stir in sprinkles and combine well
- Scoop with cookie dough scoop or tablespoon onto prepared baking sheet
- Bake for 8-10 minutes or until slightly firm but soft
- Remove from oven and place baking sheet on wire rack
- If adding chocolate kisses, add immediately
- Or cool cookies completely, then add frosting, sprinkles and chocolate kisses
- Store in airtight container
Frosting
- In a mixing bowl, cream butter until fluffy and smooth
- Sift powdered sugar into a medium bowl – this step is optional, although it makes the frosting smooth and easier to mix
- Gradually add powdered sugar, alternating with heavy cream or milk
- Add vanilla extract and beat well
Notes
For the frosting, I used clear vanilla extract to keep the frosting nice and white. Regular vanilla extract can also be used if that’s what you have on hand.
