Easy Halloween Cheesecake

You can make this cheesecake any time of year – just leave out the spider web design or decorate it a different way.

With the easy spiderweb design, it’s the perfect cheesecake to make ahead for a Halloween party, or to enjoy while watching scary movies.

I first tried this cheesecake at a friend’s house. It was so delicious and it looked so fun and spooky on her Halloween buffet that I had to ask for the recipe. Thankfully, she gave it to me and said I could share it with everyone!

Now we can all enjoy this fun, creamy, chocolatey cheesecake for Halloween and we can enjoy it really easily because this cheesecake is so incredibly easy to make!

Let me tell you all about it.

What’s In A N0-Bake Cheesecake?

If you have made a no bake cheesecake before, then you probably know that you only need a few, simple ingredients. There are no eggs required and also no tricky water baths for baking the cheesecake. Can you already tell you will fall in love with this recipe? You definitely will!

Ingredients

So take a look at these ingredients so you can head to the grocery store ASAP and then start baking.

  • Oreos– My halloween cheesecake has a dark, chocolatey Oreo crust which is made with crushed Oreos. The Oreos’ dark color is perfect for Halloween and they also taste pretty yummy with the sweet cheesecake.
  • butter– Melted butter holds the cheesecake crust together.
  • cream cheese– you can’t make cheesecake without cream cheese! Be sure it is at room temp so that it is easy to blend.
  • sugar- Granulated sugar sweeteners the cheesecake perfectly
  • lemon juice– I like a little tang in my cheesecake which I think is great with the rest of the sweet ingredients.
  • heavy cream– Whipped heavy cream helps the cheesecake get light and fluffy. Cold whipped cream whips best!
  • vanilla– A little vanilla gives the cheesecake a rich taste.
  • chocolate chips– I use melted chocolate chips to make the spider web decoration on top of the cheesecake. Of course, adding chocolate to any dessert is always a good idea anyway

Kitchen Tools:

  • 9-inch springform pan
  • mixing bowl
  • rubber spatula
  • offset spatula
  • electric mixer
  • piping bag and round tip or zip-top bag

Now that you have the ingredients and kitchen tools you need, it’s time to create your next Halloween party dessert: spiderweb cheesecake .. and there’s no baking required!

How to Make No-Bake Cheesecake for Halloween

No bake cheesecake is much easier to make than a “real” cheesecake. There is no water bath to wrestle with, no eggs to worry about over beating and also no long bake time. I know where I live, it can still be hot in October so recipes that don’t require turning on the oven are always a good idea!

So how exactly do you make a no-bake cheesecake? Here is a quick look:

how to make no bake Oreo crust

1. Pulse the Oreos in a food processor until they are crumbs.

2. Add the melted butter and mix until the crumbs start to stick together.

3. Press the Oreo crust mix into a greased 9” springform pan and then put it into the freezer.

4. Beat the cream cheese and sugar until smooth then add the lemon juice.

5. In a separate bowl whip the heavy cream and vanilla until the mixture becomes stiff.

6. Fold half of the whipped cream into the cream cheese mix which will make it nice and light. Fold the second half of the whipped cream in and then scoop the mix into the pan, on top of the Oreo crust.

7. Smooth the cheesecake in the pan so the top is nice and flat.

8. Melt the chocolate in the microwave and then pour it into a piping bag with a small round tip. Pipe the chocolate in a small circle in the center of the cheesecake then pipe a larger circle around it. Repeat until the top of the cheesecake is covered with rings of chocolate.

9.  Here’s how to make a spiderweb on a cheesecake: Take a toothpick and start in the center of the cheesecake, dragging the toothpick outward through the chocolate rings, making it look like a spiderweb.

10. Place the cheesecake in the fridge for at least 6 hours then slice and serve.

Yes, you will want to make this cheesecake ahead of time. Putting it together the day before your party is a very good idea and will ensure your cheesecake is set and cold. I have also made it in the morning and it is ready to serve by night! All it needs is some solid fridge time and you will be good to go.

No-Bake Cheesecake Variations

I know everyone has their own specific tastes and preferences especially when it comes to desserts. Luckily, there are a few ways to tweak this spiderweb cheesecake recipe so that it becomes a true favorite Halloween dessert in your home!

Here are a few ideas you can try:

  • Use Oreo crumbs instead of crushing whole Oreos. Most grocery stores carry chocolate crumbs in the baking aisle which is very convenient. You will need about 3 cups of Oreo crumbs to make this crust.
  • Use vanilla extract in place of lemon juice in the cheesecake part of the recipe. This makes it a little less tangy and a little more sweet.
  • Use regular graham cracker crumbs in place of Oreos for a more traditional cheesecake taste.
  • Add melted chocolate to the cheesecake batter and stir it in to make a full, chocolate cheesecake. Melt white chocolate to pipe the spiderweb, reversing the colors for a new design.
  • Instead of melting chocolate chips, use chocolate syrup to make the spider web. The syrup will spread a little more and have a shaggier appearance but that can definitely look quite cool!
  • Use raspberry jam to make the spiderweb instead of chocolate for a fruity tasting cheesecake.

I love recipes that are flexible so I can make them often and still get excited every time.

How to Store No-Bake Cheesecake

Do I need to add to the list of the reasons why this cheesecake is great? Because I can!

No-bake cheesecakes can be kept in the fridge for up to a week or you can freeze them for three months. Three months!

You can make this Halloween dessert way in advance and be prepared to pull out a perfect treat at a moment’s notice. Just place the cheesecake in the fridge to thaw and it will be ready to slice and serve within a few hours.

Description

This delicious and creamy no-bake spiderweb cheesecake recipe is so easy and fun to put together – perfect for your next Halloween party!

Ingredients

Scale

For the Crust:

  • 35 oreos
  • 5 tablespoons unsalted butter, melted

For the Cheesecake:

  • 16 ounces of cream cheese, softened at room temperature
  • ½ cup granulated sugar
  • 2 teaspoons fresh lemon juice
  • 1 cup heavy whipping cream, cold
  • 2 teaspoons vanilla extract
  • ¼ cup dark chocolate chips or chunks

Instructions

  1. Spray a 9-inch springform pan with non-stick cooking spray and set aside.
  2. Crush the oreos into a fine crumb using a food processor or by placing them in a sealed zip-top bag and rolling over them with a rolling pin.
  3. Place the oreo crumbs in a mixing bowl and add the melted butter. Mix until combined and the crumbs stick together when pressed.
  4. Press the oreo crumbs into an even layer on the bottom of the spring form pan to make the crust. Put the pan in the freezer while you make the filling.
  5. In a medium mixing bowl beat the cream cheese and sugar on medium-high speed with an electric mixer until smooth and creamy. Scrape down the sides of the bowl as necessary. Add the lemon juice and beat on medium speed until combined.
  6. In a separate bowl, whip the cold heavy cream and vanilla extract on high speed until it forms stiff peaks. Then, gently fold in half the whipped cream into the cream cheese mixture. Repeat with the second half.
  7. Add the cheesecake filling on top of the oreo crust and gently smooth the top with an offset spatula.
  8. Microwave the dark chocolate chips in a small microwave-safe bowl for 45 seconds. Stir until it’s smooth. Then, add it to a piping bag fitted with a small round tip (or a ziptop bag with the corner snipped off). Pipe a small circle in the center of the cheesecake. Then, draw a larger circle around it. Repeat until the top of the cheesecake is covered in rings of chocolate. Starting at the center of the smallest circle, drag a toothpick outward until you hit the edge of the springform pan. Repeat, going around in a circle, dragging the toothpick through the rings about every 45 degrees.
  9. Chill for at least 6 hours, preferably overnight. Remove from the fridge and slice when ready serve.
