Summer has finally arrived and we couldn’t be more excited to welcome the season of BBQ’s, easy, relaxing days and trips to the beach!

Every summer, my husband and I plan for at least one beach vacation trip for our family. We also do some outdoor summer activities, go on spontaneous short trips to visit local attractions or attend local events. But most days, we just love chilling at home and have family cookouts and spend a lot of time hanging out in our swimming pool. Our kids literally live in the pool all summer!



Another thing I get excited about every summer is visiting the Chesapeake Bay with my family to eat crabs and the famous Maryland crab cakes. Yes, we love to eat crabs!

Now, when you think about crabs, do you also instantly think of OLD BAY seasoning? I do!

Well, here are two quick fun facts for you about OLD BAY seasoning: 1. it’s great on everything, but especially on seafood, and 2. OLD BAY’s unique blend of 18 herbs and spices was born along the Chesapeake Bay over 75 years ago.

We love OLD BAY seasoning in our house and I use it consistently on many of our favorite everyday recipes which is why today, I’m so excited to bring you my newest summer side dish recipe! This Easy Cajun Rice with OLD BAY seasoning is not only great as a side dish for your everyday main dishes but it’s also perfect to take to your next summer picnic, potluck or for your summer cookouts and parties!

This Easy Cajun Rice is a great and satisfying side dish that is packed with flavor! This is one of my family’s favorite side dish I make. I also love that it’s versatile and can instantly turn it into an entrée by adding chicken or shrimp to it, especially on busy weeknights when I need something quick and easy.

Easy Cajun Rice


Ingredients

Scale
  • 3 cups cooked rice  
  • 1 can light red kidney beans  
  • 1 cup tomato sauce  
  • ½ diced green bell pepper  
  • ½ diced yellow bell pepper 
  • ½ diced white onion  
  • ½ cup canned diced tomato 
  • 23 tsp Old Bay seasoning  
  • 1 cup chopped celery  
  • ¼ cup chopped green chilies  
  • Parsley for garnish  

Instructions

  1. Cook rice according to package directions, then stir in tomato sauce, green chilies, and Old Bay seasoning until mixed.  
  2. Add in kidney beans, peppers, onion, diced tomato, and celery, cover, and cook over medium heat for 20-30 minutes. Make sure to stir occasionally in between.  
  3. Remove lid, garnish with parsley, and serve.

    Ohh, green chilies… this sounds like a delicious recipe! I haven’t tried Old Bay before, but it sounds like an excellent seasoning. I do like spicy foods and I like to mix things up when it comes to meals.

    Cajun Rice looks like a complete meal in itself. Love the fact that it is relatively easy to make. We make a similar rice dish at home with lots of spices and kidney beans. Will try out the Cajun variation over the weekend.

    This seasoning has been around for a long time and for good reason, it is that good. Making rice with some spice and kick to it is always a winner around my house. This rice wouldn’t last long trust me.

    I LOVE Old Bay. It is flat out the best seasoning you can use. I have put it on everything from seafood to rice to eggs, and it’s always tasty. It’s like Frank’s Hot Sauce – I put that $4!t on everything. LOL
