Ingredients for Grilled BBQ Chicken Kabobs

Here’s everything you’ll need to make the best grilled BBQ chicken kabobs, plus why each ingredient plays an important role:

For the Marinade:

  • ¼ cup olive oil – Helps distribute the flavors evenly and keeps the chicken moist during grilling.
  • ½ cup barbecue sauce – Adds the sweet, tangy, and smoky BBQ flavor that defines this dish. Choose your favorite brand or use homemade!
  • 2 tablespoons brown sugar – Enhances the sweetness and helps caramelize the kabobs on the grill for that crave-worthy char.
  • 1 tablespoon apple cider vinegar – Balances the sweetness with a bit of acidity to tenderize the meat.
  • 1 tablespoon Dijon mustard – Adds a subtle tang and depth of flavor to the marinade.
  • 1 teaspoon smoked paprika – Brings smoky richness and a pop of color to the chicken.
  • ½ teaspoon garlic powder – Adds a savory backbone to the marinade with no chopping required.
  • ½ teaspoon onion powder – Rounds out the flavor and complements the garlic.
  • ½ teaspoon salt – Enhances all the flavors and helps the chicken retain moisture.
  • ¼ teaspoon black pepper – Adds a mild kick and balances the sweetness.

For the Kabobs:

  • 2 pounds boneless, skinless chicken breasts – The main protein source. Lean, quick-cooking, and perfect for absorbing the marinade.
  • 1 red bell pepper – Adds color, crunch, and a slightly sweet flavor when grilled.
  • 1 yellow bell pepper – Brightens up the skewers and brings a mild, fruity sweetness.
  • 1 red onion – Turns sweet and slightly charred when grilled, adding delicious depth.
  • 1 zucchini – Mild, tender, and perfect for grilling. It complements the meat and other veggies beautifully.
  • 8–10 wooden skewers – Used to assemble the kabobs. Soak them in water for 20 minutes beforehand to prevent burning on the grill.

Kitchen Tools You’ll Need

To prepare and grill these easy grilled chicken kabobs with vegetables, make sure you have:

  • Large mixing bowl – for mixing the marinade and tossing the chicken
  • Whisk – to combine the marinade ingredients smoothly
  • Cutting board & sharp knife – essential for cutting chicken and chopping veggies evenly
  • Shallow dish or bowl – ideal for marinating the chicken in the fridge
  • Tongs – for turning skewers while grilling
  • Grill or grill pan – for that smoky BBQ flavor and grill marks
  • Basting brush – to glaze the skewers with reserved marinade while cooking
  • Airtight container – perfect for storing leftovers
  • Optional: aluminum foil – use this if you’re baking the kabobs in the oven instead

How to Make Grilled BBQ Chicken Kabobs Step-by-Step

If you’ve ever wondered how to make grilled chicken kabobs that turn out juicy and full of flavor, follow these easy steps:

1. Make the BBQ Chicken Kabob Marinade

Whisk together the olive oil, BBQ sauce, brown sugar, vinegar, mustard, and spices in a mixing bowl until smooth. This BBQ chicken kabobs marinade is the key to that smoky-sweet flavor.

2. Marinate the Chicken

Add your cubed chicken to a shallow bowl or dish and pour in half the marinade. Reserve the rest for brushing later. Toss to coat well, cover, and refrigerate for 30–60 minutes.

3. Prep Your Veggies & Skewers

While the chicken is marinating, cut your red and yellow bell peppers and red onion into 1.5-inch chunks. Slice the zucchini into ½-inch rounds. Soak your wooden skewers in water so they don’t burn on the grill.

4. Assemble the Kabobs

Thread the chicken and vegetables onto the skewers in a colorful pattern. Count out pieces beforehand for even assembly to make these easy grilled chicken kabobs with vegetables look uniform.

5. Grill the Chicken Skewers

Preheat your grill (or grill pan) to medium-high heat (around 375°F). Cook the BBQ skewers with vegetables for 10–14 minutes, turning every 2–3 minutes. Brush the skewers with the reserved BBQ marinade for a caramelized glaze during the final turn.

6. Rest and Serve

Let your kabobs rest for a couple minutes off the grill, then serve hot with extra barbecue sauce on the side. Pair with grilled corn, coleslaw, or sweet rolls for a complete summer BBQ chicken skewer recipe!

Expert Tips & Variations

  • Uniform Chicken Pieces: Whether you use breasts or thighs, cut them evenly so they cook through simultaneously.
  • Oven Option: No grill? Bake the skewers at 400°F for 20 minutes, turning halfway through. Brush with sauce in the final minutes.
  • Add Fruit: Try adding pineapple chunks for a burst of sweetness.
  • Make-Ahead Tip: You can assemble the skewers a few hours in advance and refrigerate until ready to grill.

FAQ for Grilled BBQ Chicken Kabobs

Can I use metal skewers instead of wooden ones?

Yes! Metal skewers are reusable and don’t require soaking. Just be careful when handling them after grilling—they get very hot. They also help conduct heat, which can slightly speed up the cooking process.

Can I make these grilled BBQ chicken kabobs ahead of time?

Yes, you can prep the skewers a few hours in advance. Just assemble them, cover tightly, and refrigerate until you’re ready to grill. For the best texture, grill them within 6–8 hours of assembling.

Can I freeze the marinated chicken?

Absolutely! You can freeze the chicken in the marinade in a freezer-safe bag for up to 2 months. When you’re ready to cook, thaw it overnight in the refrigerator, then proceed with skewering and grilling.

Can I serve these chicken kabobs cold?

These kabobs are best served hot and juicy right off the grill, but they’re also tasty cold in salads or wraps.

How should I store leftovers?

Any leftover chicken kabobs can be stored in an airtight container in the fridge for up to 4 days. Reheat them in the microwave or air fryer until warmed through.

The homemade BBQ marinade adds a rich depth, while grilling creates a delicious char that locks in the juiciness. These kabobs are perfect for summer cookouts, game day, or an easy weekend meal.

Ingredients

Scale
  • 1/4 cup olive oil
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 1 red bell pepper,
  • 1 yellow bell pepper
  • 1 red onion
  • 1 zucchini
  • 810 wooden skewers

Instructions

  1. Make the marinade by combining the olive oil, barbecue sauce, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, garlic powder, onion powder, salt and black pepper in a mixing bowl. Whisk until evenly combined.
  2. Place the chicken cubes in a bowl and pour half of the marinade over the chicken, reserving the rest. Mix the chicken until every bit is covered in the marinade. Cover and refrigerate for 30 minutes to an hour.
  3. While the chicken is marinating, cut the peppers and onions into 1.5-inch pieces. Slice the zucchini into 1/2 inch rounds.
  4. Place the wooden skewers into a water bath for 20 minutes so they do not burn.
  5. Assemble the skewers by adding an even number of chicken, peppers, onion and zucchini to each wood skewer. You can make them all different to keep them uniform. (I went chicken, red pepper, yellow pepper, onion, chicken, zucchini, chicken, red pepper, yellow pepper, onion, chicken and zucchini)
  6. Heat your grill or grill pan to around 375°F or slightly higher. Place the skewers on and grill for about 10-12 minutes, rotating every 2-3 minutes per side. When you have reached the last side, take the remaining barbecue marinade and brush over the tops of the skewers to create a glaze.
  7. Remove from heat and allow the kabobs to rest for a couple of minutes. Serve with extra barbecue sauce.
