Description

These Grilled BBQ Chicken Kabobs are like summer on a stick. They are smoky, sweet, and tangy with tender marinated chicken and caramelized veggies. The homemade BBQ marinade adds a rich depth, while grilling creates a delicious char that locks in the juiciness. These kabobs are perfect for summer cookouts, game day, or an easy weekend meal.


Ingredients

  • 1/4 cup olive oil
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 1 red bell pepper,
  • 1 yellow bell pepper
  • 1 red onion
  • 1 zucchini
  • 810 wooden skewers

Instructions

  1. Make the marinade by combining the olive oil, barbecue sauce, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, garlic powder, onion powder, salt and black pepper in a mixing bowl. Whisk until evenly combined.
  2. Place the chicken cubes in a bowl and pour half of the marinade over the chicken, reserving the rest. Mix the chicken until every bit is covered in the marinade. Cover and refrigerate for 30 minutes to an hour.
  3. While the chicken is marinating, cut the peppers and onions into 1.5-inch pieces. Slice the zucchini into 1/2 inch rounds.
  4. Place the wooden skewers into a water bath for 20 minutes so they do not burn.
  5. Assemble the skewers by adding an even number of chicken, peppers, onion and zucchini to each wood skewer. You can make them all different to keep them uniform. (I went chicken, red pepper, yellow pepper, onion, chicken, zucchini, chicken, red pepper, yellow pepper, onion, chicken and zucchini)
  6. Heat your grill or grill pan to around 375°F or slightly higher. Place the skewers on and grill for about 10-12 minutes, rotating every 2-3 minutes per side. When you have reached the last side, take the remaining barbecue marinade and brush over the tops of the skewers to create a glaze.
  7. Remove from heat and allow the kabobs to rest for a couple of minutes. Serve with extra barbecue sauce.
