Strawberry Chicken Salad with Strawberry Balsamic Dressing

On April 29th, I had the wonderful chance to be at the opening of “The Market at Potomac Mills” – a seasonal farmers market located in the commuter lot of the Potomac Mills outlet mall in Woodbridge, Virginia.

As I’ve shared in this post, I was thrilled to be at this event, because not only do I really enjoy going to farmers markets, it’s also being held at one of my top favorite places to shop for anything and everything here in Northern Virginia: the Potomac Mills mall.

Held every Saturday from April 29 through October 28, 2017, from 7am to 2pm, The Market at Potomac Mills will be featuring more than 50 local farmers, producers and vendors.

Purveyors include:

  • Westmoreland Berry Farm, a family-owned berry farm and market
  • Emerald Bee Bath, premium, hand-made soaps, bath bombs, scrubs, lotions and more
  • Blenheim Organic Gardens, a 400-acre farm that grows USDA certified organic produce
  • Sprelly, specializing in gourmet PB&Js
  • Tart Cart, making naturally gluten-free, vegan sweets

During our visit on opening day, a live band was playing while we were browsing through the market, which added cheer to the whole occasion.

Face painting is always fun for kids! "The Market at Potomac Mills - Woodbridge, Virginia

Kids can enjoy face painting and balloon artists will entertain them too at "The Market at Potomac Mills" in Woodbridge, Virginia- (held from late April to late October 2017)

There were bounce houses and balloon artists to entertain the kids too.  If you live close to the Woodbridge area at all or visiting or just feel like exploring, it’s one place to be on a nice weekend day!

One thing I love about going to farmers markets is that you’ll never know what you’ll find.

I’m like a child in a candy store when it comes to visiting farmers markets! I just get so excited seeing all of the fresh, natural produce, food, skin care items, candles, fruits and plants… you name it!

We enjoyed these mouth-watering, freshly-made healthy crepes from Rita's Crepes at "The Market at Potomac Mills" in Woodbridge, Virginia

My husband and I enjoyed a lunch of yummy, healthy crepes from Rita’s Crepes. Seriously guys, if you haven’t tried them and you’re not far from this farmers market, I suggest you go and get your quick, yummy ‘grab and go’ Saturday lunch at this cool eatery inside the farmers market at Potomac Mills.  They make the most delicious crepes right in front of you right after you order it!

For this salad, I make my own strawberry balsamic dressing – so easy to make, yet, it’s the perfect dressing flavor for this super healthy salad that has lots of my favorite greens: spring mixed greens and kale fresh from the farmers market at Potomac Mills.

Strawberry Chicken Salad with Strawberry Balsamic Dressing


Ingredients

Scale

For the Salad:

2 cups cooked chicken, chopped

2 cups spring mixed greens, chopped

2 cups kale, chopped

2 cups strawberries, chopped

½ cup dried cranberries

¼ cup crumbled feta cheese

¼ cup sliced almonds

For the Strawberry Balsamic Dressing:

1 cup strawberries

¼ cup balsamic vinegar

¼ cup extra-virgin olive oil

1 tbsp Dijon mustard

1 clove garlic, minced

¼ tsp salt

¼ tsp pepper


Instructions

  1. To make the strawberry balsamic dressing: In a food processor or blender, pulse the strawberries, balsamic vinegar, olive oil, dijon mustard, garlic, salt and pepper until smooth. Set aside.
  2. In a large bowl toss the chicken, spring mixed greens, kale, strawberries, dried cranberries, feta cheese, and sliced almonds. Toss with dressing or drizzle on top of served portions.

    I love when we can shop at our local farmer’s market! Unfortunately the one we went to last year has closed down. There’s a few really cool market places but they are much further from our home. This looks like a fun place and I love that it’s kid friendly!

    I love events like Potomac Mills. Every time, there are events like this, I would always take with me more cash, sometimes, it is a little bit expensive than the usual items in the grocery store but I wouldn’t hesitate to spend much on it. Most products comes from the farmers from the region, and mostly are organic so it is really advisable to patronize their products.

    The salad is healthy, and very appetizing. I too love to put balsamic vinegar on my salad. Great that you added strawberries.

    I really enjoy market because of all the good food and the fresh produce. I appreciate the salad recipe, especially the dressing. I have salad most of the days during Summer because it’s easy to prepare and you don’t have to heat up the kitchen.

    We have a farmers market every Saturday nearby our home. We’ve been several times, only I’m not impressed. The handmade jewelry and soap always outweighs the food, which in my opinion is the whole reason for the farmers market.

    I love Farmer’s Markets!!! Every Saturday there is one near our home in Brooklyn, and I work right by the huge Union Square Farmer’s market in Manhattan. You are so right that you never know what delights you might find!

    I love going to places like this. It brings back the idea of local. I love farmers market’s and local businesses and stuff like that. It looks like the food here was outrageously delicious.

    I love farmers market! That crepe looks amazing and I wish someone did that around here! Our market in my old city also had live music and things for kids. The ones here don’t and it really does change the feel of the market.
