St. Patrick’s Day is a fun time celebrated by the Irish, Irish-Americans and many others throughout the US. So I thought it would be fun to show you a new an easy and delicious dessert recipe perfect for St. Patrick’s Day: Mint Chocolate Chip Brookies! Even more fun, there’s a St. Patrick’s Day trivia for you at the end post to test your knowledge about this fun holiday!
Mint Chocolate Chip Brookies
When it comes to St. Patrick’s Day – it seems everyone focuses on the main dish and green beer for what to serve come March 17. But, what about dessert? Here I’m showing you a fun, St. Patrick’s day-themed sweet treat that will have you wanting it year round. (Have it again, we won’t tell anyone!)
- 1/2 cup coconut oil, melted
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 1/4 cup white sugar
- 1/4 cup dark brown sugar
- 1/2 tsp vanilla
- 2 large eggs, room temperature
- 3/4 cup all-purpose flour
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup dark chocolate mint M&Ms candy
- Preheat the oven to 350°F.
- Spray an 8 x 10" baking dish with nonstick cooking spray, and line one side with parchment paper so you can remove the brownies more easily when they're done. Set aside.
- Add the coconut oil, cocoa powder, and salt, and whisk to combine. A hand mixer works best for this.
- Add the white sugar, brown sugar, vanilla, and eggs, and whisk to combine.
- Stir in the flour until just combined.
- Stir in the chocolate chips.
- Pour the brownie batter into your prepared dish and sprinkle the M&M's all over the top.
This dessert combines moist brownies with a chewy cookie for a fun twist on two favorites! The M&Ms add a rich, dark chocolate flavor and the delicious taste of mint. As with any brownie or cookie recipe, be sure to not overbake it or it can be dry. Start checking for doneness after about 22 minutes. We used the dark chocolate mint M&Ms for this St. Patrick's Day treat, but you could use any color or flavor of M&M's you like! If making these for St. Patrick's Day, you can pick up a few inexpensive decorations at your local dollar or craft store for an extra festive presentation. The coconut oil will give these a very slight coconut flavor. If you're opposed to that, you can substitute the coconut oil with melted butter.

How’d you do on the quiz? Truth be told, while we may all have a bit o’ Irish on March 17th, 33.3 million U.S. residents claim Irish ancestry! While Ireland may see St. Patrick’s Day as a high holiday, we celebrate a bit differently!

My favorite thing about St.Patrick’s day is it is my grandsons birthday. I use to put green dye in the kids mac n cheese looking back it looked terrible. Btw i took ur test before I read the article to see how I would do. Think I got a D ?

My favorite part of Saint Patrick’s Day is making the Irish Soda Brad. The house smells so good from the baking that I wish I could bottle it as perfume!

When I was single, so many years ago, I loved going out with my friends to celebrate St. Patrick’s Day. I am still a fan of having a green beer. Now, I wear something green and will make a corned beef and cabbage dinner in the slow cooker 🙂
