A Quick Dinner Hack and Avocado Chicken Salad Recipe – Lightened Up! 

Here’s a personal confession: on those hurried nights when we need a quick dinner, I’d pick up a Signature Cafe® Whole Roasted Chicken at the Safeway store near my house, warm it up in the oven for 15 minutes as soon as I get home, then slice it up and serve with steamed veggies and voilà, we have dinner on the table in under 30 minutes! That’s a quick dinner hack that works for me every time! 😉

But on most days, I’ll make one of my signature recipes like this Lightened Up Avocado Chicken Salad!

Lightened Up Avocado Chicken Salad

Description

Try this healthier, lightened up version of your normal chicken salad, made even more delicious with ‘good for you’ avocados!


Ingredients

Scale
  • 2 1/2 cups roasted or cooked chicken, shredded
  • 2 green onions, sliced
  • 1/4 cup Italian parsley, chopped
  • 2 large, ripe avocados
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • buns or lettuce leaves, for serving

Instructions

  1. Slice the avocado in half, and carefully remove the pit. Scoop out the flesh, and place it in a large bowl.
  2. Use a fork or potato masher to mash the avocado.
  3. Add the olive oil, lemon juice, salt, and pepper, and continue to mash the ingredients until smooth.
  4. Add the chicken and green onions, and stir to combine.
  5. Sprinkle in the parsley and stir again.
  6. Taste and adjust the salt and pepper to your liking.
  7. Serve as sandwiches or as lettuce wraps for a gluten-free option!

For this recipe, I used Signature Cafe® Whole Roasted Chicken and other ingredients from Safeway’s Signature line of products (lemon and extra virgin olive oil as pictured above). This chicken salad is absolutely delicious and so good for you!   If you aren’t a fan of mayonnaise, avocado does a perfect job of replacing it.  Plus, it’s a nutritional powerhouse! I love serving this as a healthy appetizer on small pieces of lettuce, so my guests can pop them into their mouth in one bite. You can also buy use the large pieces of lettuce and roll it up burrito-style. I find that red or green leaf lettuce works best because it’s more pliable and doesn’t break when you roll it.  We like to add a touch of olive oil for added flavor, moisture, and healthy fat!   The lemon adds a fresh, bright flavor and prevents the avocado from turning brown too quickly.  This salad is easily customizable! Some yummy add-ins would be diced red onion, tomato, olives, or even different herbs.

    I’m most interested in trying their Maple Suryp. It’s such an expensive product that my family loves. If I can save some money on that it would be an awesome help to our grocery budget!

    Your avocado chicken salad looks like a delicious and easy meal! We love all things avocado at our house. We don’t have the Safeway chain near us, I checked. We have the Kroger stores but I think they are from the same family. I buy the store brands all the time!

    Love the idea of swapping the mayo out in favor of ripe avocados. Great idea! We don’t live near a Safeway anymore, but when we did it was my favorite place to shop. The Signature brand products are really great!
