Description
Try this healthier, lightened up version of your normal chicken salad, made even more delicious with ‘good for you’ avocados!
Ingredients
- 2 1/2 cups roasted or cooked chicken, shredded
- 2 green onions, sliced
- 1/4 cup Italian parsley, chopped
- 2 large, ripe avocados
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- buns or lettuce leaves, for serving
Instructions
- Slice the avocado in half, and carefully remove the pit. Scoop out the flesh, and place it in a large bowl.
- Use a fork or potato masher to mash the avocado.
- Add the olive oil, lemon juice, salt, and pepper, and continue to mash the ingredients until smooth.
- Add the chicken and green onions, and stir to combine.
- Sprinkle in the parsley and stir again.
- Taste and adjust the salt and pepper to your liking.
- Serve as sandwiches or as lettuce wraps for a gluten-free option!
