Spooky Halloween Monster Ice Cream Sandwiches



These spooky, easy to make Halloween ice cream sandwiches made with sugar cookie dough, Halloween-themed candy and sprinkles and vanilla ice cream are the perfect Halloween treat for your trick or treaters or for your next Halloween party!   

Can you believe that it is almost fall? I feel like the summer flew by so quickly! While I am sad to see summer end, I am also getting excited for all my favorite fall things, especially Halloween.

Halloween is definitely not just a holiday for kids and trick or treating. I like to make it into a full, month-long event! How do I do that? By making delicious, Halloween-themed foods  in October. It is fun to get into the spooky spirit!

Halloween Ice Cream Sandwiches

One of my favorite Halloween treats that I make every year is my monster cookie ice cream sandwiches. They are super easy to make and the perfect dessert to help you transition from summer into fall. You still get a delicious, summery ice cream sandwich but with a Halloween twist!

Let me tell you all about how I make Halloween monster cookies and then make ice cream sandwiches so you can try them too!

Ingredients for Halloween Cookies and Ice Cream Sandwiches

Before I start baking, I always get out all the kitchen tools I will need first. For this ice cream sandwich recipe, you don’t need too much! All you need is two sheet pans with parchment paper and an ice cream scoop. That’s it! Here is a quick look at the ingredients you will need:

  • ready to bake sugar cookie dough– I like to use Pillsbury sugar cookie dough that you can find in the refrigerated section of your grocery store or on Amazon but any brand will work! You can even make your own sugar cookie dough if you’d like. I just like to save time and buy the dough so I can eat the cookies sooner
  • Halloween sprinkles– I always look for Halloween sprinkles that have the mini eyeballs and ghosts in the mix. These are extra festive for Halloween! I got them on Amazon or look for them in your local craft store.
  • candy eyes– If you can’t find halloween sprinkles with candy eyes in the mix, add a few of your own! The Amazon really make the ice cream sandwich recipe halloween-y. Most craft stores have candy eyes in the baking section at Halloween time but you can also order candy eyes on Amazon
  • vanilla ice cream– Use your favorite brand of vanilla ice cream to make the best ice cream sandwich recipe ever. I like to use softer vanilla ice cream like Breyers or Friendly’s brand which are easier to eat when sandwiched between two Halloween monster cookies!




Once you have these four ingredients and your cookie trays ready to go, you are only minutes away from eating a delicious Halloween monster cookie ice cream sandwich. Getting excited? I sure am!

How to Make Ice Cream Sandwiches for Halloween

Just like the ingredients and tools for this ice cream sandwich recipe are super simple, the steps to making the ice cream sandwiches are very easy too. Here is what you need to do:

1. Preheat your oven and get your baking trays ready with parchment paper. 

2. Roll each pre-portioned cookie dough ball in the Halloween sprinkle mix, covering the dough completely in sprinkles.

3. Place the sprinkle covered cookie dough on the baking sheet, spacing them about 2 inches apart. Press a few extra candy eyes into the dough to make sure the Halloween monster cookies will look extra spooky.

4. Bake the cookies until the edges turn golden brown, about 14 minutes. Let the cookies cool on the tray.

5. Flip half of the cookies over so the flat side is facing up. 

6. Place one scoop of ice cream on each of the flipped cookies then place a second cookie on top of the ice cream, creating your Halloween ice cream sandwich.

Serve the cookies immediately while they are fresh and soft. I also like to individually wrap the ice cream sandwiches in plastic wrap then store them in the freezer. You can grab one anytime you need a sweet Halloween ice cream sandwich treat! 

Substitutions and Variations

I have tweaked the recipe quite a few times. Here are a few of my favorite ways to switch up this ice cream sandwich recipe:

  • Use chocolate ice cream in place of vanilla. Really any flavor of ice cream will work!
  • Use Christmas sprinkles or red, white and blue sprinkles for the Fourth of July. These ice cream sandwiches are really ideal for any holiday! 
  • Try using chocolate sugar cookie dough. I found chocolate sugar cookie dough in my local grocery store and it really made the cookies look extra spooky! The dark dough was a nice contrast to the white candy eyeballs.
  • Knead a few drops of red food coloring into the sugar cookie dough to make it a creepy, red color. Even more perfect for Halloween!
  • Scoop the ice cream into a bowl then top with the baked Halloween monster cookie. Add a little whipped cream, some chocolate sauce and a cherry to make an easy Halloween ice cream sundae.

Tips and Tricks: Halloween Monster Cookie Ice Cream Sandwiches

I always try to make my recipes as easy as possible so everyone can bake amazing treats. Here are a few tips and tricks to help make these perfect ice cream sandwiches.

  1. Bake the cookies to be nice and soft. Take them out of the oven when the edges are just beginning to turn brown. Soft cookies are easier to eat as a sandwich as they will not crumble and crack.
  2. I buy my Halloween sprinkles on Amazon but local craft stores and grocery stores will likely have them in stock in October. Choose your favorite!
  3. If your cookie dough is too cold, the sprinkles may not stick well. Let the dough sit at room temp for about 5 minutes to soften it. 
  4. To store the ice cream sandwiches in the freezer, wrap each one individually in plastic wrap. They will keep for about 3 months!
  5. Press a few candy eyes into the top of the cookies to make them more prevalent. Sometimes the candy eyes sink into the cookies so adding a few extra is always a good idea!

These spooky, easy to make Halloween ice cream sandwiches made with sugar cookie dough, Halloween-themed candy and sprinkles and vanilla ice cream are the perfect Halloween treat for your trick or treaters or for your next Halloween party!   


Ingredients

1 package ready to bake sugar cookie dough, I used Pillsbury Ready To Bake Refrigerated Sugar Cookie Dough

4 oz Halloween sprinkles

0.88 oz candy eyes

1.5 quarts vanilla ice cream


Instructions

  1. Preheat the oven to 350°F. Line two sheet pans with parchment paper.
  2. Roll each cookie dough ball into the sprinkles and press a few candy eyes into each cookie. Place on the sheet pan 2 inches apart.
  3. Bake for 13-17 until the edges are golden brown. Allow the cookies to cool completely.
  4. Flip half the cookies over and place one scoop of the ice cream onto each of those cookies. Top the ice cream with the remaining cookies.
  5. Serve immediately or store in the freezer until you want to serve them.
