  • Great for meal prep and leftovers
  • Creamy, cheesy, and satisfying comfort food
  • Easy to customize with your favorite add-ins

Ingredients You’ll Need

Here’s what goes into this delicious one-skillet chicken fajita bake:

  • Spices: smoked paprika, chili powder, garlic powder, onion powder, cumin, salt
  • Chicken: 1½ pounds boneless chicken breast, sliced thin
  • Veggies: red, green, and yellow bell peppers + red onion
  • Creamy Base: whipped cream cheese, red salsa, lime juice
  • Cheese: cheddar cheese (or Mexican blend)
  • Base Layer: cooked Jasmine rice
  • Oil & Garnish: olive oil and chopped cilantro

These simple ingredients come together to create bold, Tex-Mex-inspired flavors in every bite.

How to Make Chicken Fajita Casserole (Step-by-Step)

Step 1: Prep the Chicken and Spices

Start by combining your spices—smoked paprika, chili powder, garlic powder, onion powder, cumin, and salt. Sprinkle half the mixture over the chicken slices and toss to coat.

Step 2: Sear the Chicken

Heat a cast iron skillet over medium-high heat. Add olive oil and sear the chicken pieces for 2-3 minutes on one side, then flip and cook for another 1-2 minutes. You’re not cooking them all the way through—just building flavor!

Step 3: Cook the Veggies

Add your sliced bell peppers and red onion right into the skillet. Sauté for 2-3 minutes until just softened. Then remove from heat.

Step 4: Make the Creamy Fajita Sauce

In a bowl, mix the whipped cream cheese, red salsa, lime juice, the remaining seasoning, and half of the shredded cheese. This becomes your creamy, tangy fajita sauce.

Step 5: Assemble the Casserole

Stir in the cooked Jasmine rice with your skillet mixture of chicken and veggies.

Pour the creamy sauce over everything and mix it all together. Top it off with the remaining cheddar cheese.

Step 6: Bake Until Bubbly

Bake in a 400°F oven for 20–25 minutes or until the cheese is golden and the casserole is bubbling around the edges.

Step 7: Garnish and Serve

Sprinkle chopped cilantro on top and serve with lime wedges. And that’s it—dinner is done!

Chicken Fajita Casserole Recipe: Easy Variations

  • Make It Spicier: Add a can of green chilis or a chopped jalapeño.
  • Cheese Swap: Use Mexican blend or quesadilla cheese for extra meltiness.
  • Low Carb Option: Skip the rice and use riced cauliflower instead.
  • Add Beans: A can of drained black beans adds fiber and texture to the dish.
  • Meal Prep Friendly: Make it the night before and bake when ready. If cold, add 5–10 minutes of baking time.

 Kitchen Tools You’ll Need

  • Large cast iron skillet
  • Sharp knife + cutting board
  • Medium mixing bowl
  • Oven-safe mitts

Why This Casserole Is a Weeknight Winner

As a busy mom, I’m all about recipes that are quick, tasty, and require minimal cleanup. This chicken fajita casserole checks all the boxes—plus, it gives me that satisfying Tex-Mex flavor my whole family loves.

What I really appreciate is how customizable it is. On some nights, I’ll use leftover rotisserie chicken to save time. Other times, I prep everything ahead in the morning and pop it in the oven at dinnertime.

It’s cozy, flavorful, and so simple—precisely the kind of recipe I love sharing on Hip Mama’s Place.

FAQ: Chicken Fajita Casserole

1. What do I need to complete this recipe?

You’ll need chicken breast, spices, bell peppers, red onion, whipped cream cheese, salsa, lime juice, cheddar cheese, Jasmine rice, and cilantro.

Kitchen tools: a cast-iron skillet, a knife, a cutting board, and a mixing bowl.

2. Can I make this ahead of time?

Absolutely! Prep and assemble the casserole a day in advance, cover and refrigerate. Bake just before serving (add 5–10 minutes extra bake time if baking cold).

3. How do I store the leftovers?

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.

4. Can I eat this cold?

It’s best enjoyed warm when the cheese is gooey and melted—but hey, no judgment if you sneak a cold bite from the fridge!

My Tips for the Best Chicken Fajita Casserole

  • When slicing the chicken, try to aim for 2 inch pieces lengthwise and 1/2 inch wide. They should be about the same length as the bell peppers and onion slices.
  • You can add some heat to this by adding  a can of green chilis. It will enhance the flavor and add a light heat.
  • I used cheddar cheese for this casserole but you can use a Mexican blend or quesadilla cheese for a really melty topping.
  • You can make the casserole a day in advance, then just place it in the oven when you are ready. If it comes from cold, it may need a few extra minutes in the oven.
  • I like using whipped cream cheese for this as it’s much easier to work with.  If you want to use regular cream cheese, just make sure it is softened.

Serving Suggestions

This creamy chicken fajita casserole is hearty on its own, but you can serve it with:

  • Warm flour tortillas
  • A side salad with avocado and lime vinaigrette
  • Cornbread or tortilla chips for scooping

This easy chicken fajita casserole recipe brings all the fun of fajita night into one satisfying, oven-baked meal. Whether you’re cooking for a family of four or prepping lunch for the week, it’s an easy, flavorful dinner you’ll want to keep in your regular rotation.
