Description

Easy and flavorful chicken fajita casserole baked in one skillet! This cheesy fajita chicken bake is loaded with juicy chicken, peppers, and Tex-Mex spices—a perfect weeknight one skillet chicken dinner.


Ingredients

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 1/2 pounds boneless chicken breasts, thinly sliced into pieces 
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced into 2-inch pieces
  • 1 green bell pepper, sliced into 2-inch pieces
  • 1 yellow bell pepper, sliced into 2-inch pieces
  • 1 medium red onion, sliced into 2-inch pieces
  • 6 ounces whipped cream cheese
  • 1 cup red salsa
  • Juice of 1/2 lime
  • 1 1/2 cups cheddar cheese, shredded 
  • 1 cup Jasmine rice, cooked
  • 2 tablespoons chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Mix the smoked paprika, chili powder, garlic powder, onion powder, cumin and salt together.
  2. Pour half of the seasoning mixture over the chicken slices and toss until all the chicken is coated in seasoning.
  3. Heat a large cast iron skillet over medium-high heat. Pour the olive oil into the skillet and then sear the chicken on one side for 2-3 minutes. Flip the chicken and cook for an additional 1-2 minutes.
  4. Add the sliced bell peppers and red onion into the skillet. Cook for 2-3 minutes until the peppers have softened a little bit. Remove from heat.
  5. In a mixing bowl, combine the whipped cream cheese, red salsa, lime juice, the remaining half of seasoning, and half of the shredded cheddar cheese.
  6. Add the cooked rice to the chicken and veggie mixture. Pour in the salsa cream cheese mixture into the skillet and mix until evenly distributed.
  7. Top with the remaining shredded cheddar cheese. Place into the oven for 20-25 minutes, until the cheese is melted and the casserole is bubbly. Serve with chopped cilantro and lime wedges.
