Easy and flavorful chicken fajita casserole baked in one skillet! This cheesy fajita chicken bake is loaded with juicy chicken, peppers, and Tex-Mex spices—a perfect weeknight one skillet chicken dinner.

- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 1/2 pounds boneless chicken breasts, thinly sliced into pieces
- 2 tablespoons olive oil
- 1 red bell pepper, sliced into 2-inch pieces
- 1 green bell pepper, sliced into 2-inch pieces
- 1 yellow bell pepper, sliced into 2-inch pieces
- 1 medium red onion, sliced into 2-inch pieces
- 6 ounces whipped cream cheese
- 1 cup red salsa
- Juice of 1/2 lime
- 1 1/2 cups cheddar cheese, shredded
- 1 cup Jasmine rice, cooked
- 2 tablespoons chopped cilantro (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Mix the smoked paprika, chili powder, garlic powder, onion powder, cumin and salt together.
- Pour half of the seasoning mixture over the chicken slices and toss until all the chicken is coated in seasoning.
- Heat a large cast iron skillet over medium-high heat. Pour the olive oil into the skillet and then sear the chicken on one side for 2-3 minutes. Flip the chicken and cook for an additional 1-2 minutes.
- Add the sliced bell peppers and red onion into the skillet. Cook for 2-3 minutes until the peppers have softened a little bit. Remove from heat.
- In a mixing bowl, combine the whipped cream cheese, red salsa, lime juice, the remaining half of seasoning, and half of the shredded cheddar cheese.
- Add the cooked rice to the chicken and veggie mixture. Pour in the salsa cream cheese mixture into the skillet and mix until evenly distributed.
- Top with the remaining shredded cheddar cheese. Place into the oven for 20-25 minutes, until the cheese is melted and the casserole is bubbly. Serve with chopped cilantro and lime wedges.
