Winter brings some of the gloomiest days of the year and often, we turn to comfort foods. If you're anything like me, you have a list of go-to "stick to your ribs" kind of dishes that you and your family love during the cold season: pasta, stews, casseroles. These types of dishes can be very satisfying, yet they can also be very time-consuming and require more effort than most of us can spare during the busy week.
Fortunately, we can still have our comfort food and eat it, too! Thanks to easy dishes that use equipment like the slow cooker or pressure cooker, we can have dinner on the table easily without sacrificing flavor in our food!
I don't know about you, but I really love the idea of "set it and forget it" meals using my handy slow cooker. I have a lot of favorite slow cooker recipes to share and today, I'm really excited to share my latest slow cooker recipe with you: Open-Faced Pork Loin Sammies with Applewood Smoked Bacon Onion Jam.
This recipe is so easy and came out so flavorful, thanks to Smithfield Marinated Fresh Pork!

If you've ever had one of those hurried days and you just want a quick meal for your family, you'll be glad you have Smithfield Marinated Fresh Pork. With the prep work already done for you, simply cook the pork loin filet in the slow cooker, along with a few simple ingredients, and you'll have a delicious, hassle-free dinner in no time!
Smithfield Marinated Fresh Pork is made from 100% fresh pork without any artificial ingredients and is packed with protein. The pork is slow-marinated and perfectly seasoned, which makes it the perfect base for any style of dish. It's so versatile, because you can also slow-cook, roast, grill, or sauté it depending on what your recipe calls for.
For my slow cooker recipe, I used the Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet (which I got from Walmart), sliced it up into smaller pieces, and slow-cooked it on high for 4 hours with only a cup of water. Keep in mind, the meat is already marinated and seasoned with real bacon toppings, so there's no need for extra flavor. When the pork loin filet is done, I just take it out of the slow cooker and put it on potato buns topped with my Bacon Onion Jam recipe.
For my Bacon Onion Jam recipe, I used the Smithfield Hickory Smoked Lower Sodium Bacon, along with a few ingredients I already had in my pantry. It's delicious, super quick and is perfect to go with my pork loin sammies!
Open-Faced Pork Loin Sammies with Applewood Smoked Bacon Onion Jam
Description
Easy and delicious, this slow cooker pork recipe is ideal for those busy nights when you don't have much time to spare in the kitchen!
Ingredients
For the Slow Cooker Pork:
1 package Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet
1 cup water
For the Bacon Onion Jam:
2 cups Smithfield Bacon, sliced into half inch pieces
2 medium yellow onions, diced small
2 garlic cloves, smashed and diced small
3 tbsp. honey
¾ cup brewed coffee
½ tsp cumin
1 tbsp. balsamic vinegar

Instructions
For the Slow Cooker Pork:
- Take the pork loin filet out of the package and cut it into one-inch thick pieces before placing in the slow cooker, bacon side up. Add water.
- Cover and cook in the slow cooker for 4 hours on high, or 8 hours on low.
- Remove from the slow cooker when done and cool before serving.
For the Bacon Onion Jam:
- In a large skillet, cook the Smithfield Bacon over medium-high, stirring occasionally, until fat is rendered and bacon is slightly browned, about 10-15 minutes.
- With a slotted spoon, transfer bacon to paper towels to drain. Pour off all but one tablespoon of fat from skillet.
- Add onions and garlic and cook until onions are translucent, about 6 minutes.
- Add the balsamic vinegar, honey, and coffee and bring to a boil, stirring and scraping up browned bits from skillet with a wooden spoon, about 2 minutes. Add bacon and cumin and stir to combine and cook 5-10 minutes more, depending on your desired jam consistency.
- Transfer to a food processor and pulse until coarsely chopped. Let cool, then refrigerate in an airtight container and use within 3 weeks.
