Summer holidays, such as Independence Day and Memorial Day, are all about family, sunshine, backyard BBQs—and, of course, delicious, festive desserts. This American Flag Brownie Cake is a crowd-pleaser that looks as good as it tastes. It’s fudgy, chocolatey, and topped with sweet cream cheese frosting and fresh red, white, and blue berries arranged in the shape of the American flag.
This is the kind of dessert that brings oohs and ahhs to the cookout table. I first made this brownie cake for a family Fourth of July picnic a few years back, and now it’s become a tradition. My boys even help line up the berries in flag formation—makes it that much more special.

Ingredients You’ll Need
Here’s everything you’ll need to make this delicious and festive patriotic brownie cake:
For the Brownie Base:
- 1 cup (2 sticks) unsalted butter
- 2 cups (16 oz) milk chocolate chips
- 2 tsp vanilla bean paste
- 1 cup all-purpose flour
- ½ cup special dark cocoa powder
- ½ cup granulated sugar
- 1 ½ cups brown sugar
- 6 large eggs (room temperature)
- ½ tsp sea salt
For the Cream Cheese Frosting:
- ½ cup (1 stick) unsalted butter, softened
- 8 oz cream cheese (1 brick), softened
- 3 ½ to 4 cups powdered sugar
- ½ tsp vanilla bean paste
- Optional: 1–2 tbsp milk (if needed for texture)
Toppings:
- 1 cup fresh blueberries
- 2 cups fresh raspberries (about 2 pints)
How to Make an American Flag Brownie Cake
Step 1: Bake the Brownie
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish (or a porcelain baking slab for extra flair).
2. In a saucepan, melt the butter and chocolate chips over medium heat, whisking until smooth. Remove from heat and let cool for about 5 minutes.
3. In a mixing bowl, beat together granulated sugar, brown sugar, vanilla bean paste, and eggs until well combined.
4. Stir in the cocoa powder, flour, and sea salt until the batter is glossy and smooth.
5. Pour the batter into your prepared pan and bake on the center rack for 35–40 minutes. Check doneness with a toothpick—it should come out mostly clean.
6. Let the brownie cool completely before frosting.
Tip: I used special dark cocoa powder for an extra-rich flavor, but feel free to use your favorite unsweetened cocoa.
Step 2: Make the Cream Cheese Frosting
- In a large mixing bowl, beat softened butter and cream cheese until smooth and fluffy.
- Add vanilla bean paste.
- Slowly add powdered sugar, one cup at a time, mixing until it reaches a thick, pipeable consistency. Add milk if needed.
Step 3: Decorate Your Patriotic Brownie Cake
1. Once the brownie has thoroughly cooled, spread about two-thirds of the frosting over the top using an offset spatula.
2. Place the brownie pan horizontally in front of you.
3. In the top left corner, place the blueberries in an 8×7 grid to represent the stars.
4. Along the top edge, create a row of raspberries, leave a row of space, then another row of raspberries—repeat until you have five rows of raspberries and five empty rows in between.
5. Add the remaining frosting to a piping bag fitted with a closed star tip. Pipe white rosettes in between each row of raspberries to complete the flag’s “stripes.”
Optional: Add Shine to Your Berries
Want to make your berries sparkle? Microwave 2 tablespoons of marmalade or peach preserves, then gently brush them over the fruit using a pastry brush. It adds a gorgeous glossy finish!
Perfect for Patriotic Celebrations
This red, white, and blue dessert is a showstopper for:
- Fourth of July barbecues
- Memorial Day gatherings
- Veterans Day school parties
- Labor Day picnics
- Even Flag Day if you’re feeling festive 🇺🇸
I love that this patriotic brownie cake can be made a day ahead. Just wait to add the fruit until just before serving to keep everything looking fresh and appetizing.
Kitchen Tools You’ll Need
- 9×13-inch baking pan or slab dish
- Saucepan
- Stand mixer or hand mixer
- Offset spatula
- Piping bag with closed star tip
- Mixing bowls
- Pastry brush (optional, for glazing fruit)
If you’re looking for a beautiful baking dish, I used the Made In slab dish, but any standard 9×13 will work perfectly.
My Tips for the Best American Flag Brownie Cake
- Room temperature eggs whip up better and create a lighter texture. Don’t skip this step!
- Use dark cocoa for a richer flavor, but regular unsweetened cocoa works well too.
- Pipe the frosting just before serving if you’re prepping ahead. It keeps everything fresh and picture-perfect.
- Want an extra kick? Add ½ tsp espresso powder to the brownie batter to enhance the chocolate flavor.
Make It Your Own!
Don’t have raspberries? Use sliced strawberries instead. Want to go all-out? Add a sparkler or patriotic pick on top for a firework-worthy finish!
