There’s so much to love about summer. People are generally happier when summer comes around.  In our family, we love going to the beach and spend a lot of time in our swimming pool on hot summer days. We also do a lot of spontaneous get togethers and cookouts with family and friends, which means that I have to have my “taste tested”, quick and delicious recipes handy.  (Now, doesn’t summer also means food??? And I mean, lots of food!)

There are many different variations to this recipe. You could pick a different ice cream flavor or use the Lemon NILLA Wafers if you prefer the lemon over the original flavor.  For this recipe, I use the original NILLA Wafers (which my family and I prefer) and vanilla ice cream. Now, if you’re not into this recipe at all and you’d like to see more yummy, “no bake” dessert recipes, you have to visit the NILLA Wafers recipes page.
