There’s so much to love about summer. People are generally happier when summer comes around. In our family, we love going to the beach and spend a lot of time in our swimming pool on hot summer days. We also do a lot of spontaneous get togethers and cookouts with family and friends, which means that I have to have my “taste tested”, quick and delicious recipes handy. (Now, doesn’t summer also means food??? And I mean, lots of food!)
So today, I’m excited to bring you one of our family’s favorite summer recipes that are perfect for afternoon snacks or desserts: Red, White and Blue Mini Ice Cream Sandwiches with NILLA Wafers! Cookies and ice cream are a winning combo, so it’s no surprise that these mini ice cream sandwiches are an instant hit every time I serve them. Not only are they delicious, but I also like that they require less cleanup than a bowl of ice cream!
We already love NILLA Wafers as snacks by themselves but I also love that I can use them in simple, “no bake” recipes such as these mini ice cream sandwiches for summer entertaining. The possibilities with NILLA Wafers are endless and quite honestly, they’re the perfect platform for delicious summer recipes!
And since July 4th (Independence Day) is coming up, I’m making my mini ice cream sandwiches fun and festive with red, white and blue sprinkles! Now, tell me: aren’t these the perfect July 4th desserts? Patriotic, yummy and refreshing, these mini ice cream sandwiches are super easy to put together too and does not require many ingredients. I’m not huge on ice cream, but I could eat these mini ice cream sandwiches any given day. Yesss! They’re that good, my friends! 🙂

Red, White and Blue Mini Ice Cream Sandwiches with NILLA Wafers
Ingredients
- one (1) package of NILLA Wafers
- vanilla ice cream
- red, white and blue sprinkles
- whipped cream
Instructions
- Using a small ice cream scooper or a regular spoon, put a small amount of ice cream on the flat side of the NILLA Wafer and then add another one on top.
- Flatten the sandwich a little and roll onto the sprinkles.
- Set in freezer until serving time, then top with whipped cream and more sprinkles if desired.
- Enjoy!
There are many different variations to this recipe. You could pick a different ice cream flavor or use the Lemon NILLA Wafers if you prefer the lemon over the original flavor. For this recipe, I use the original NILLA Wafers (which my family and I prefer) and vanilla ice cream.
