Grapefruit and Yogurt Parfaits #Recipe

 

Simple, Spring, sweet… okay, I won’t try to come up with another “s” word. But I am loving this new yogurt parfait that I’ve started making. 🙂

Yogurt parfaits are simple, because you basically take yogurt, some fruit, and layer them in a tall glass for a simple, healthy dessert or snack.

For a spring snack or for a low-key gathering, I love how the Ruby Red Grapefruit just basically sparkles in clear parfait glasses! Plus, it is super healthy!

Grapefruit & Yogurt Parfait Recipe (makes two small parfaits)

Variations:

Use a local honey that’s been infused with spring flowers for an extra feel of spring.

Try an alternative sweetener, if you desire.

Add extra layers with fruit or berries that are opposite the color wheel of the grape fruit.

Now with spring here, I’m looking to freshen up our diets once again. We don’t need as many “comfort” snacks as we do in the middle of winter! Plus, with our busy schedule, I don’t want any of us to feel sluggish: This is a perfect protein-packed option for after school, or even as a quick breakfast (you can make it in a bowl for breakfast, if you wish). I really love how light and fresh these parfaits are! The grapefruit is sweet and fresh and perfectly complements the creamy, tangy yogurt.

Reasons I choose Grapefruit in my Parfaits

  • The taste is a perfect bit of tanginess that goes well with smooth yogurt
  • According to Registered Dietitian Nurse at Medical News Today, Megan Ware, grapefruits are an “excellent source of vitamins A and C… and does not significantly affect blood sugar and insulin levels.”
  • Grapefruits are up to 91% water, and help keep us regular since it is full of good fiber!

We used Ruby Red grapefruit because they are sweet and the color is gorgeous. Of course, you can use any kind of grapefruit you want.

Hint: If you happen to get a grapefruit that is not yet ripe, you can add additional sweetener to balance out the tartness of the grapefruit.

    Im so loving fruit and yogurt now! never though of doing grapefruit in a parfait though. i love grapefruit and definitely want to try this

    I’m not a fan of grapefruit but I’d try this! I’ve had the yellow pomelo with yogurt and I love that, but this is a great combo!

    I’m not a fan of the grapefruit, but I bet an orange would work for this parfait. I love the idea of adding honey to yogurt. I haven’t tried it yet, but I think it would add the right amount of sweetness.

    I LOVE grapefruit! I am not a huge yogurt person, I will eat it with the right stuff and I am definitely going to have to try this. What a great idea! (I love grapefruit just about any way you want to serve it to me LOL)!
