Cowboy Caviar Recipe

In a small bowl, whisk together ingredients for the dressing then set aside.

Next, drain and rinse the black beans and black-eyed peas, then place them in a large bowl along with the corn.

Next, chop the vegetables and add them to the bowl. Mix everything together well.

Pour dressing over mixture and mix everything together until it is well coated with the dressing.

Cover the bowl with plastic wrap and refrigerate it for at least 30 minutes to allow the flavors to meld.
