Make the best mint chocolate chip cookies using simple ingredients like dark chocolate cake mix, cocoa powder, and mint baking chips. Perfect for all skill levels, these cookies are irresistibly delicious and easy to bake!



1 (15.25 ounce) box of dark chocolate cake mix

¼ cup Dutch process cocoa powder

2 large eggs

½ cup (1 stick) salted butter, melted

1 cup mint baking chips

½ cup milk chocolate chips


  1. Preheat your oven to 350°F and get 2 or 3 big baking pans ready by lining them with parchment paper or using cooking spray.
  2. In a large mixing bowl, whisk together the dark chocolate cake mix and cocoa powder until they’re well combined.
  3. In another bowl, mix the eggs and melted salted butter until you have a soft, smooth dough.
  4. Add the mint and milk chocolate chips to the dough and gently fold them in until they’re evenly spread.
  5. Grab a 1 ½ tablespoon cookie scoop and use it to scoop out portions of dough. Place them on the baking sheets, making sure they’re 1 ½ inches apart and away from the pan’s edges.
  6. Press the cookies down a bit with your hand or the bottom of a clean glass.
  7. Bake each tray in the preheated oven for 8-12 minutes or until the sides are set and the tops have a slight wrinkle.
  8. Let the cookies cool for 7-10 minutes before transferring them to a cooling rack or serving tray. Enjoy your delicious homemade cookies!
