Spinach Ham and Cheese Omelette

Description

This colorful, flavorful omelette has got 'better for you' ingredients and is perfect for starting your day off right! Serve it with a side of your favorite fruit.


Ingredients

Scale
  • 3 large eggs
  • 1 tbsp half and half
  • pinch salt and pepper, to taste
  • 4 mushrooms, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 handful spinach leaves, sliced
  • 4 slices Oscar Mayer Selects Natural Applewood Smoked Ham
  • 1/4 cup shredded cheddar cheese
  • chopped tomatoes, for garnish
  • sliced green onions, for garnish

Instructions

  1. Add the eggs, half-and-half, and a pinch of salt and pepper to a bowl and whisk to combine.
  2. Add a little olive oil or nonstick cooking spray to a small skillet, and sauté the mushrooms and onions for 3 to 4 minutes or done to your liking. Set aside.
  3. Place a 10-inch skillet on the stove over medium-high heat. Liberally spray the pan with nonstick cooking spray and pour the eggs in the pan.
  4. Working quickly, tilt the pan to evenly distribute the eggs. Use a spatula to move the eggs in the middle around for the first 10 to 15 seconds of cooking. This helps prevent the center of the omelette from getting too brown on the bottom.
  5. Turn the heat down to medium and continue cooking the omelette, using a spatula to pull in the edges as needed to keep it in a circular shape.
  6. When the top of the egg is mostly cooked but still a little wet, spread the mushroom and spinach filling on one-half of the omelette, slightly off center.
  7. Lay 4 slices of ham over the filling followed by the cheese.
  8. Turn the heat down to low and place a cover over the pan for 1 to 2 minutes or until the cheese is melted.
  9. Using a wide spatula, flip the side of the omelette without any filling over the top of the cheese.
  10. Carefully transfer the omelette to a serving dish and garnish with the tomatoes and green onions.
