For the Casserole:
- 1 pound ground beef
- 1 small yellow onion, diced
- 1 packet (1 ounce) taco seasoning
- 1 cup frozen corn
- ½ cup beef broth or water
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes and chiles, undrained
- 1 (10 ounce) can red enchilada sauce, divided in half
- 18 small or medium sized corn tortillas
- 3 cups colby jack cheese, freshly shredded and divided
Optional Toppings:
- Sour cream
- Green onions
- Fresh cilantro, chopped
- Roma tomatoes, diced
- Jalapenos
- Black olives
Instructions
- Preheat your oven to 375 degrees F and grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef with the diced onion until the meat is fully cooked.
- Drain any excess fat, then stir in the taco seasoning, corn, beef broth, black beans, diced tomatoes and chiles, and half of the enchilada sauce.
- Stir and cook uncovered over medium high heat for an additional 10 to 15 minutes or until the majority of the liquid is gone. Set aside for now.
- Pour a very thin layer of the remaining enchilada sauce onto the bottom of the baking dish and spread it to the edges to prevent sticking.
- Place 6 tortillas on the bottom of the dish, overlapping them as needed to cover the surface.
- Spread half of the beef and bean mixture over the tortillas, then sprinkle with 1 cup of cheese.
- Repeat the layers with another 6 tortillas, the remaining beef mixture, and 1 cup of cheese.
- Top with the final 6 tortillas, the rest of the enchilada sauce, and the last cup of cheese.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 10 to 15 minutes until the cheese is bubbling and slightly golden.
- Let the casserole stand for 5 minutes before topping with optional garnishes.
