Mexican Casserole Recipe

For the Casserole:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 packet (1 ounce) taco seasoning
  • 1 cup frozen corn
  • ½ cup beef broth or water
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (10 ounce) can diced tomatoes and chiles, undrained
  • 1 (10 ounce) can red enchilada sauce, divided in half
  • 18 small or medium sized corn tortillas
  • 3 cups colby jack cheese, freshly shredded and divided

Optional Toppings:

  • Sour cream
  • Green onions
  • Fresh cilantro, chopped
  • Roma tomatoes, diced
  • Jalapenos
  • Black olives

Instructions

  1. Preheat your oven to 375 degrees F and grease a 9x13 inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef with the diced onion until the meat is fully cooked.
  3. Drain any excess fat, then stir in the taco seasoning, corn, beef broth, black beans, diced tomatoes and chiles, and half of the enchilada sauce.
  4. Stir and cook uncovered over medium high heat for an additional 10 to 15 minutes or until the majority of the liquid is gone. Set aside for now. 
  5. Pour a very thin layer of the remaining enchilada sauce onto the bottom of the baking dish and spread it to the edges to prevent sticking.
  6. Place 6 tortillas on the bottom of the dish, overlapping them as needed to cover the surface.
  7. Spread half of the beef and bean mixture over the tortillas, then sprinkle with 1 cup of cheese.
  8. Repeat the layers with another 6 tortillas, the remaining beef mixture, and 1 cup of cheese.
  9. Top with the final 6 tortillas, the rest of the enchilada sauce, and the last cup of cheese.
  10. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 10 to 15 minutes until the cheese is bubbling and slightly golden.
  11. Let the casserole stand for 5 minutes before topping with optional garnishes.
