Description

Easy Instant Pot Butter Chicken with tender chicken, tomato sauce, cream, and warm Indian spices. A quick, one-pot dinner ready in 40 minutes!


Ingredients

Scale

4 tablespoons butter, divided

4 cloves garlic, minced

1 medium yellow onion, finely diced

2 tablespoons freshly grated ginger

2 large chicken breasts, cut into 1” pieces

2 teaspoons garam masala

½ teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon chili powder

(optional: up to 1 teaspoon cayenne powder)

½ teaspoon salt

1 cup tomato sauce

¼ cup water

½ cup heavy whipping cream or half-and-half

Fresh chopped cilantro for garnishing


Instructions

  1. Turn Instant Pot to Saute.
  2. When hot, melt 2 tablespoons of butter. Add the onion and cook 2 to 3 minutes, until soft.
  3. Add the chicken pieces and cook, stirring until no long pink on outside.
  4. Add garlic and ginger and spices. Stir and cook for one minute.
  5. Turn Instant pot off. Stir in the tomato sauce and ¼ cup of water.
  6. Close the lid and make sure valve is set to Sealing.
  7. Cook on high pressure for 5 minutes.
  8. When done cooking, allow a natural release for 5 minutes before releasing steam and pressure and opening the lid.
  9. Stir in the cream. Turn Pot to Saute and add in the remaining 2 tablespoons butter.
  10. Continue to cook and stir until thickened.
  11. Taste and season with salt and pepper if needed.
  12. Garnish with cilantro and serve over rice and/or with a side of naan bread.
