Kick your mornings off to a great start with these Honey Apple Muffins! They’re incredibly moist and full of yummy cinnamon, honey and apple flavor!
Ingredients
- 2 cups all-purpose flour
- ½ cup sugar
- pinch of salt
- 1 tbsp. cinnamon
- 2 tsp. baking powder
- ¼ cup cooking oil
- ¼ cup butter, softened
- 2 eggs
- 1 ½ tsp. vanilla extract
- ⅓ cup honey
- ½ cup heavy whipping cream
- 2 cups green apples, peeled and chopped small
Instructions
- Preheat the oven to 375 degrees.
- In a mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt. Stir to combine thoroughly.
- To the dry mixture, add the eggs, oil, butter, honey, vanilla extract and heavy whipping cream. Beat on high until smooth and creamy.
- Carefully fold the apple pieces into the batter until combined.
- Line muffin tins with 12 cupcake liners and fill them with the batter mixture 3/4 of the way full.
- Bake the muffins for 30 minutes or until cooked completely through.
- Serve sprinkled with additional cinnamon or drizzled with some fresh honey for a little bit more sweetness, if desired.
