Ingredients

- 3 cups cooked rice
- 1 can light red kidney beans
- 1 cup tomato sauce
- ½ diced green bell pepper
- ½ diced yellow bell pepper
- ½ diced white onion
- ½ cup canned diced tomato
- 2-3 tsp Old Bay seasoning
- 1 cup chopped celery
- ¼ cup chopped green chilies
- Parsley for garnish
Instructions
- Cook rice according to package directions, then stir in tomato sauce, green chilies, and Old Bay seasoning until mixed.
- Add in kidney beans, peppers, onion, diced tomato, and celery, cover, and cook over medium heat for 20-30 minutes. Make sure to stir occasionally in between.
- Remove lid, garnish with parsley, and serve.
