This easy Chorizo Breakfast Hash with Apple & Butternut Squash is the perfect sweet-savory skillet meal for breakfast, brunch, or dinner. Ready in under 45 minutes and full of cozy fall flavor!


Ingredients

  • 1 tablespoon olive oil
  • 8 ounces fresh chorizo sausage, casing removed and crumbled
  • 2 1/2 cups butternut squash, peeled and diced into 1/2-inch cubes
  • 1 small onion, diced
  • 1 large apple (Honeycrisp or Fuji), peeled, cored, and diced into 1/2-inch pieces
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 4 eggs (optional, for topping)
  • Optional garnishes: cilantro, sour cream, lime

Instructions

  1. Heat a large skillet over medium heat. Add the olive oil, then the chorizo. Cook, breaking it up, until browned and cooked through, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the fat in the pan.
  2. Add the butternut squash and cook, stirring occasionally, for 5-7 minutes until lightly browned.
  3. Add the onion and apple. Season with salt and pepper and cook until tender and lightly browned, 7-9 minutes.
  4. Stir in the garlic, paprika, and cinnamon. Cook 1-2 minutes until fragrant.
  5. Return the cooked chorizo to the pan and cook 2-3 minutes to warm through. Taste and adjust seasoning.
  6. Meanwhile, cook the eggs to your liking (fried, poached, or scrambled).
  7. Top with eggs and garnish with cilantro, sour cream, and lime wedges.
