- 1 tablespoon olive oil
- 8 ounces fresh chorizo sausage, casing removed and crumbled
- 2 1/2 cups butternut squash, peeled and diced into 1/2-inch cubes
- 1 small onion, diced
- 1 large apple (Honeycrisp or Fuji), peeled, cored, and diced into 1/2-inch pieces
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 4 eggs (optional, for topping)
- Optional garnishes: cilantro, sour cream, lime
Instructions
- Heat a large skillet over medium heat. Add the olive oil, then the chorizo. Cook, breaking it up, until browned and cooked through, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the fat in the pan.
- Add the butternut squash and cook, stirring occasionally, for 5-7 minutes until lightly browned.
- Add the onion and apple. Season with salt and pepper and cook until tender and lightly browned, 7-9 minutes.
- Stir in the garlic, paprika, and cinnamon. Cook 1-2 minutes until fragrant.
- Return the cooked chorizo to the pan and cook 2-3 minutes to warm through. Taste and adjust seasoning.
- Meanwhile, cook the eggs to your liking (fried, poached, or scrambled).
- Top with eggs and garnish with cilantro, sour cream, and lime wedges.
