Description

Ingredients

  • 1 pound ground beef (93% lean)
  • ½ cup yellow onion, finely chopped
  • 3 jalapeno peppers, seeded and finely chopped, divided
  • 4 ounces green chiles
  • 1 ounce taco seasoning 
  • 16 ounce tortilla chips 
  • 15 ounce refried beans
  • 2 cups cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 3 green onions, sliced
  • 2 tablespoons cilantro, chopped 
  • 1 cup sour cream (optional)

Instructions

  1. Preheat the oven to 400° F.
  2. Line a baking sheet with parchment paper. 
  3. In a large skillet add the ground beef and onion. Cook over medium heat for 5-7 minutes or until the juices run clear. 
  4. Drain the excess grease if needed. 
  5. To the skillet add ¾ of the jalapeno peppers, green chiles, and taco seasoning. Mix until combined. Set aside. 
  6. Add the chips to the baking sheet. 
  7. Top the chips with the refried beans. 
  8. Top the beans with the meat mixture. 
  9. Top the meat mixture with the cheese.
  10. Bake for 15 minutes or until the cheese is fully melted.
  11. Remove the baking sheet from the oven. 
  12. Add the tomatoes, green onions, remainder of the jalapenos, and cilantro. 
  13. Top with sour cream (optional).
  14. Serve immediately and enjoy.
