- 1 pound ground beef (93% lean)
- ½ cup yellow onion, finely chopped
- 3 jalapeno peppers, seeded and finely chopped, divided
- 4 ounces green chiles
- 1 ounce taco seasoning
- 16 ounce tortilla chips
- 15 ounce refried beans
- 2 cups cheddar cheese, shredded
- 1 cup cherry tomatoes, halved
- 3 green onions, sliced
- 2 tablespoons cilantro, chopped
- 1 cup sour cream (optional)
Instructions
- Preheat the oven to 400° F.
- Line a baking sheet with parchment paper.
- In a large skillet add the ground beef and onion. Cook over medium heat for 5-7 minutes or until the juices run clear.
- Drain the excess grease if needed.
- To the skillet add ¾ of the jalapeno peppers, green chiles, and taco seasoning. Mix until combined. Set aside.
- Add the chips to the baking sheet.
- Top the chips with the refried beans.
- Top the beans with the meat mixture.
- Top the meat mixture with the cheese.
- Bake for 15 minutes or until the cheese is fully melted.
- Remove the baking sheet from the oven.
- Add the tomatoes, green onions, remainder of the jalapenos, and cilantro.
- Top with sour cream (optional).
- Serve immediately and enjoy.
