The winter is so long I forgot how Spring feels. It’s still chilly and windy here today and tomorrow, we’re supposed to get another one to three inches of snow. I am just done with this cold weather. Hopefully, it won’t be too bad.
So, I’m trying to get into the spirit of Spring. Do you know that tomorrow, March 20th, is the beginning of Spring?
So, I’m welcoming this new season with a new recipe: our family favorite, carrot cake cupcakes!
Nothing says Spring dessert like carrot cupcakes! Reminds me of cute bunny rabbits, chirping birds and colorful Easter eggs! And I love that these irresistible cupcakes are so easy to make. I made these today after breakfast and my husband commented on how our house smelled so yummy! These cupcakes came out so good and so perfect, I was so proud of myself! 🙂 I love the texture and the sweetness is just right. I have used other recipes for carrot cupcakes in the past, but this one is definitely a keeper!
Thanks to Christina Lane’s Dessert For Two: Small Batch Cookies, Brownies, Pies and Cakes cookbook, I have got the perfect recipe to make this all-time favorite Springtime dessert! Before I share the recipe, I just want to say that this cookbook is such a delight! Each recipe featured in this cookbook is scaled to serve two people, but you can easily double or triple the ingredients to make a whole batch and serve them to any size family or crowd.
I love a cookbook that’s got clean, crisp, glossy pictures of the finished recipe and this cookbook definitely doesn’t disappoint! I highly recommend this dessert cookbook for newlyweds, empty nesters, or anyone just looking to practice portion control in their lives. You can really still enjoy and indulge your sweet tooth, but you don’t have to overdo it. And this cookbook tells you just that and more!
So there are a lot of other dessert recipes I’d like to try from this cookbook. I won’t promise, but I’m looking to cook and bake more and hopefully, post more recipes here on HMP. This cookbook will help! 🙂
