Here’s my reality and I’m sure most of you can relate to:  I know how important it is to fuel ourselves with foods that offer good nutrition. Ingredients

Here’s what you’ll need from the store before you begin:

  • Old Fashioned Oats
  • Pumpkin Puree
  • Eggs
  • Oil
  • Honey
  • Vanilla
  • Pumpkin Spice
  • Salt
  • Chocolate Chips

This recipe is so easy that you can make a batch first thing in the morning. Here are some tips and answers to a few questions.

Use Pumpkin Pie Filling

Save yourself a few extra steps. Use a can of pumpkin pie filling. It will replace the pumpkin puree, honey, and pumpkin spice. It’s already sweetened and spiced.

Change The Chips

I used milk chocolate chips. But you can use dark chocolate chips or even white chocolate chips.

Add Coconut Flakes

If you want to make them even more delicious, add some unsweetened coconut flakes! This will make them taste like magic bars.

Store Them Correctly

Keep the bars in an airtight container and store them in the refrigerator for up to three days.

And now that we’re enjoying this beautiful Fall weather, I thought it’s the perfect time to make something delicious that can be enjoyed by everyone! And  let me tell you, my friends. This recipe is easy as 1-2-3! It’s basically “mix, pour and bake” it literally took me under 10 minutes to put together and off to the oven they went!

These Pumpkin Oatmeal Chocolate Chip bars came out so good and they’re just perfect as a Fall breakfast or mid-day snack! The pumpkin puree balances out the dry texture of the oats, along with the other ingredients. They’re chewy, delicious and moist and the sweetness is just right. (Yes, even with the chocolate chips!)

Pumpkin Oatmeal Chocolate Chip Bars


Description

These super easy and delicious Pumpkin Oatmeal Chocolate Chip bars are perfect for breakfast or when you need an easy snack!


Ingredients

Scale
  • 2 1/2 cups old fashioned oats
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 oil
  • 1/4 cup honey (or maple syrup)
  • 1 tsp vanilla
  • 1 Tbsp pumpkin spice
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees and spray a 8×8 pan with cooking spray.
  2. In a mixing bowl, mix oats, pumpkin puree, eggs, oil, honey, vanilla, pumpkin spice and salt in a bowl until well combined.
  3. Fold in chocolate chips and pour into prepared pan.
  4. Bake for about 25 minutes or until the edges are golden brown.
  5. Cut into small or large squares and enjoy with a glass of milk or hot tea!

    I’ve never tried pumpkin before. I haven’t ever had the guts because the smell really turns me off. That said, these look REALLY good. I bet they are just tasty!
