Today, November 21st, is National Adoption Day and I’m glad there’s such a day to celebrate it for many people who created their families in this way!
When I was asked to discuss about adoption, I immediately thought about our own family. We are a blended family. I have two small boys from a previous marriage and my husband have a son of his own. My husband and I knew that there will be challenges ahead for having a blended family. In a family like ours, more often than not, there’s a difficult balancing act between the new spouse, the new stepchildren, and one’s own kids. But I can honestly say, that ours is a successful blended family story. And although we didn’t go through any legal adoption process with any of our kids, my husband and I both took our boys as they are all our own. In a way, we have ‘adopted‘ each other’s families when we entered into our marriage.
My husband and I make it our top priority that each of our children feels loved, cared for and that no one feels ‘less’ than the other. I know that I’m very lucky to have such an incredible, loving partner, husband and father to our kids and that we’re on the same page with everything – including how we treat, nurture and care for each other and our kids. I’m proud to say that all of our children are happy, comfortable and content whenever we’re all together as one family, and that’s a very important thing for us … and I’m sure, as with any other family.
On the subject of adoption, I’d like to share these facts about adoption:
- One in 12 married couples in the U.S. are interracial 
- Nearly 40% of children don’t live with both of their biological parents. Only 62% of children live with their two biological parents 
- 125,000-plus same-sex couples currently raising children in the U.S. 
- More than 1.5 million American families  have been touched by adoption

For this delicious, easy to make recipe, I basically took the basic ingredients of Honey Maid graham crackers, marshmallows and chocolate squares …
… baked them for 10 minutes at 350 degrees ..
.. then covered them with melted chocolate and then made them look festive using sprinkles. So easy! You could use regular marshmallows, but I had leftover pumpkin spiced mallows that I had from my last dessert recipe. So I used those and made these chocolate-covered s’mores sandwiches Fall-flavored and they turned out sooo good! 🙂
