Oh, the holidays! It’s time to break out all those sweet, flavorful treats and get into the spirit of the season!
I, for one, love baking and cooking for the holidays. So when I was approached about whipping up a dessert recipe for the holidays using SPLENDA® Sweeteners, I happily accepted. I wanted to feature a recipe for the No Bake Caramel Pecan Cheesecake that a friend had introduced me to recently. I was so intrigued about how delicious the cheesecake tasted and there was no baking required. I did tweak the recipe a bit to suit my taste and I couldn’t be any happier with the results! My husband loved it too and this is one of those simple desserts I can make in a snap!
A sweet dessert, without the unnecessary calories: No Bake Caramel Pecan Cheesecake (in a jar!)

For this recipe, I used SPLENDA® Sugar Blend which I got from Walmart. Let me tell you: with the holiday hustle bustle and all, the stores are always so crowded these days. So if you know what you need and you just want to grab all your baking stuff in one place, Walmart is the place to be! I found my Splenda Sugar Blend and other baking items in the “Flour, Sugar, Spices and Shortening” aisle at my store right by the Holiday Baking Center (usually situated in the middle of the store) by the main entrance. It was so easy to find all that I needed and I got out of there pretty quickly!
So.. back to my caramel pecan cheesecake recipe.
The original recipe called for 4 tbsp of pure sugar and I substituted it using only 2 tbsp of SPLENDA® Sugar Blend which has got the same amount of sweetness as the pure sugar, but with only half the calories & carbohydrates! How cool is that? And believe me, the taste is just as great as using pure sugar.
So this amazing, “no bake” cheesecake is loaded with luscious caramel pecan flavor and the texture is a little lighter and less dense than that of the baked one. It’s creamy, melt in your mouth good with just the right amount of sweetness!
Bonus: Freeze this cheesecake for a sweet treat later!
You can freeze these in individual sized cups or jars like I did here. I would freeze them for up to three months, or leave them in the fridge for about a week.
