2 packages instant ramen noodles
2 tablespoons butter
2 cloves garlic, minced
½ teaspoon red pepper flakes
2 tablespoons brown sugar
3 tablespoons soy sauce
2 eggs
Furikake or everything bagel seasoning, for garnish
Chopped green onions, for garnish
Instructions
- Boil water in a medium pot over high heat. Add the noodles. Save the seasoning packets for another recipe.
- Cook the noodles for 3 minutes until they are tender but still firm. Reserve about a ¼ cup of the pasta water before draining. Drain the noodles.
- Melt butter in a large nonstick skillet over medium heat. Add the garlic and red pepper. Saute for 30 seconds until the garlic is fragrant.
- Stir in the brown sugar and soy sauce. Simmer for another 30 seconds until the sugar dissolves.
- Toss the noodles into the skillet and coat with the sauce using tongs.
- Push the noodles to one side of the skillet to create an open space. Crack the eggs into the empty side.
- Scramble the eggs until they are cooked through but soft.
- Mix the scrambled eggs into the noodles to distribute them.
- Remove the skillet from the heat. Stir in the reserved pasta water if the noodles look dry or clumpy.
- Sprinkle the furikake and chopped scallions over the noodles.
- Divide the noodles between two bowls and serve while hot.
