September is National Honey Month and to celebrate, I’m sharing a new yummy recipe with you: Honey Apple Muffins!

But before I talk about the recipe, I want to tell you some facts about bees, pollinators and pollinated foods. I know I get excited when I’m learning something new and then, be able to share them with you!

HONEY BEES, POLLINATED FOODS AND FEED A BEE

Honey is a staple in our house. We use them in our teas, salads, smoothies and in many of our family’s favorite recipes, including the new muffin recipe I’m going to be sharing with you today!

So, I’m ecstatic that I could offer this sort of ‘education’ with you all on honey bees, pollinators and pollinated foods today. Here are some cool *facts on these topics:

    • In the United States, more than $15 billion dollars-worth of crops are pollinated by bees each year. In the United States, honey bees perform most of the insect pollination, with help from other pollinators like ants, bats, bees, beetles, birds, butterflies, flies, moths and wasps.
    • Bees pollinate when they fly from blossom to blossom gathering pollen and nectar for their food. When they land on flowers to collect pollen, some of the pollen sticks to bees’ hairy bodies and then brushes off onto another flower.



  • While many plants are completely dependent on pollinators to produce fruits, vegetables and seeds, other plants can be pollinated by wind or water, or self-pollinated. For example, pine trees are wind-pollinated. Plants that are dependent on pollinators tend to have brightly-colored flowers, nectar or scent to attract pollinators.

A worthwhile initiative called Feed A Bee of the Bayer Bee Care Program focuses on planting pollinator forage across the nation with the help of communities, individuals and organizational partners. Feed a Bee knows the important role honey bees play in pollinating many of our fruits, nuts, and vegetables which help contribute to a healthy diet, and because of that, they are encouraging everyone to help honey bees thrive. How? You can plant your own pollinator-attractant flowers or use the hashtag #FeedABee on your social media pages to spread awareness about the need for more pollinator forage. Since we’re talking about honey and honey bees and because I’m also celebrating National Honey Month, I’m so excited to share with you this new muffin recipe! It incorporates honey and one of our top favorite ‘pollinated foods’: apples!

I have been trying to break the monotony in our breakfast routine lately, as the kids are getting bored with pancakes and cereal. I haven’t made these Honey Apple Muffins in a long time, so I was excited to make them again for National Honey Month. My husband and kids love these muffins and they are perfect for a tasty breakfast!

QUICK TIPS FOR MAKING THE PERFECT HONEY APPLE MUFFINS

These Honey Apple Muffins will kick your mornings off to a great start! They're incredibly moist and full of yummy cinnamon, honey and apple flavor!

  • You can use many types of apples for this recipe. But green apples are my choice because the slightly tart flavor offsets the sweetness of the other ingredients in the recipe when it’s all baked and done.
  • You will also want to chop the apples fairly small so they cook well while baking.
  • Fill the muffin tins 3/4 of the way full. The muffins will rise a little but not very much.




HOW TO MAKE EASY HONEY APPLE MUFFINS 

1. Preheat the oven to 375 degrees.

2. In a mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt. Stir to combine thoroughly.

3. To the dry mixture, add the eggs, oil, butter, honey, vanilla extract and heavy whipping cream. Beat on high until smooth and creamy.

4. Carefully fold the apple pieces into the batter until combined.

5. Line muffin tins with 12 cupcake liners and fill them with the batter mixture 3/4 of the way full.

6. Bake the muffins for 30 minutes or until cooked completely through.

7. Serve sprinkled with additional cinnamon or drizzled with some fresh honey for a little bit more sweetness, if desired.

Even though I always associate these Honey Apple Muffins for cool autumn mornings with their delicious “smell of Fall” apples and cinnamon, they are a perfect year-round breakfast or snack treat!  They’re super easy to make too and I know apple picking season is here, so this is a great way to use up those apples from the orchard!

Ingredients

Scale
  • 2 cups all-purpose flour
  • ½ cup sugar
  • pinch of salt
  • 1 tbsp. cinnamon
  • 2 tsp. baking powder
  • ¼ cup cooking oil
  • ¼ cup butter, softened
  • 2 eggs
  • 1 ½ tsp. vanilla extract
  • ⅓ cup honey
  • ½ cup heavy whipping cream
  • 2 cups green apples, peeled and chopped small
