Thanksgiving is a time of year when you can reflect on your blessings from the past year, spend quality time with your family and of course, enjoy a sumptuous dinner with them on Thanksgiving night! For my family, Thanksgiving is always a wonderful time to get together and just enjoy lots of yummy food!

Speaking of Thanksgiving dinner, have you decided on a menu yet? I spent a good amount of time yesterday browsing through my favorite magazines, cookbooks and online cooking sites to gather some great recipe ideas for Thanksgiving. I’ve always wanted to try baking a good pumpkin bread. My husband and I love the pumpkin bread slices from Starbucks with our coffee and I told him I will try and find a good recipe for pumpkin bread and we’ll see what happens. So yesterday, I woke up early and went to my favorite grocery store, Food Lion, to get a few missing ingredients for my very first pumpkin bread recipe! I already had most of the ingredients in my kitchen pantry so that made the task even easier. Plus, I didn’t have to spend too much time at the grocery store and get sidetracked. Whew, I do that all the time and end up never finishing my tasks for the day, lol.
Here is a photo and recipe of my Pumpkin Bread glazed with vanilla-cinnamon-butter syrup.. yumm! I was so thrilled it actually turned out great! The bread texture is smooth and moist and the sweetness is just perfect. This was definitely a hit with my family and will be making them again soon!

Pumpkin Bread 


(1) 15 oz. can pumpkin puree                                 3 1/2 cups all-purpose flour
4 eggs                                                                         2 tsp baking soda
1/2 cup melted butter                                             2 tsp pumpkin spice
1/4 cup vegetable oil                                               1 1/2 tsp salt
1/4 cup applesauce                                                  1 tsp ground cinnamon 
2/3 cup water                                                           1 tsp ground nutmeg
2 cups white sugar                                                   1/2 tsp ground cloves
1 cup brown sugar                                                   1/4 tsp ground ginger


1. Preheat oven to 350 degrees F (175 C). Grease and flour two 9×5 loaf pans.

2. Mix together the pumpkin puree, eggs, melted butter, oil, applesauce, water, white and brown sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, pumpkin spice, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

3. Bake for about an hour in the preheated oven. Loaves are done when toothpick inserted in center comes out clean. 

I wanted to make a cinnamon-vanilla glaze over the top of my bread so here is what I did:  I combined 1/2 cup butter, 1 cup brown sugar in a saucepan over low-medium heat until it began to boil After removing the mixture from heat, I added 1/4 tsp. cinnamon, 1/2 tsp. vanilla and about 2 tbsp. buttermilk. I poked holes into the loaves just after removing them from the oven and poured the glaze over them. It was sooo delish!
